- 4 medium potatoes, peeled and sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley (optional, for garnish)
- 1/2 cup chicken broth (or white wine for extra flavor)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large baking dish, arrange the sliced potatoes in a single layer. Drizzle with olive oil and season with garlic powder, onion powder, paprika, thyme, salt, and pepper. Toss to coat.
- Season the chicken thighs with salt, pepper, and a little paprika. Place them on top of the potatoes in the baking dish.
- Pour the chicken broth (or white wine) around the chicken and potatoes.
- Cover the dish with foil and bake for 40 minutes.
- Remove the foil and bake for an additional 20 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F/75°C) and the potatoes are golden and tender.
