  • 4 bone-in, skin-on chicken thighs (or breasts)
  • 4 medium potatoes, peeled and sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)
  • 1/2 cup chicken broth (or white wine for extra flavor)

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a large baking dish, arrange the sliced potatoes in a single layer. Drizzle with olive oil and season with garlic powder, onion powder, paprika, thyme, salt, and pepper. Toss to coat.
  • Season the chicken thighs with salt, pepper, and a little paprika. Place them on top of the potatoes in the baking dish.
