  • 1 ½ cups of crushed graham crackers
  • 1 ¼ cups of granulated sugar
  • ⅓ cup of melted butter
  • 3 packages (about 225g each) cream cheese
  • ¾ cup of sugar
  • 1 tablespoon of vanilla extract
  • 3 eggs
  • ½ cup of sour cream
  • 1 ½ tablespoons of ground cinnamon
  • ½ cup of sugar for topping

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mix the crushed graham crackers, ¼ cup of sugar, and melted butter. Press this mixture into the bottom of a springform pan to form the crust. Bake for 10 minutes. Let it cool.
  • In a large bowl, beat the cream cheese and remaining sugar until creamy. Add the vanilla extract and eggs one at a time, beating well after each addition.
  • Pour the cream cheese mixture over the cooled crust.
  • Bake for 55 to 60 minutes, or until the center is almost set.
  • Let the cheesecake cool at room temperature for 1 hour, then refrigerate for 4 hours or overnight.
  • Before serving, mix the cinnamon and sugar, and sprinkle over the top of the cheesecake.

Notes

  • Cheesecake Texture: Be careful not to overbake the cheesecake, as it can cause cracks. The center should still be slightly jiggly when you take it out of the oven—it will firm up as it cools.
