  • 1 cup beef broth
  • 1 tsp dried Italian seasoning
  • Salt and pepper, to taste
  • 1 tbsp olive oil (for cooking)
  • Fresh parsley or grated Parmesan for garnish (optional)

Instructions

  • In a large skillet or pan, heat the olive oil over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned and fully cooked. Drain any excess fat.
  • Add the chopped onion and minced garlic to the pan, cooking for about 2 minutes until softened and fragrant.
  • Stir in the diced tomatoes (with their juices), beef broth, and Italian seasoning. Bring to a simmer.
  • Add the uncooked pasta to the pan and stir to combine. Cover and simmer for about 10-12 minutes, or until the pasta is tender and the liquid is mostly absorbed, stirring occasionally.
  • Reduce heat to low and add the Velveeta cheese cubes. Stir continuously until the cheese is fully melted and the sauce is creamy.
  • Season with salt and pepper to taste. Garnish with fresh parsley or grated Parmesan, if desired, and serve immediately.

Notes

  • Feel free to substitute Velveeta with another type of melting cheese for a different flavor, but Velveeta provides a smooth, creamy texture that’s perfect for this dish.
