- 1/2 cup unsalted butter
- 1/2 cup milk
- 1/4 cup cocoa powder
- 1 teaspoon vanilla extract
- 1/2 cup creamy peanut butter
- 3 cups quick oats (rolled oats)
- Pinch of salt
Instructions
- In a medium saucepan, combine the sugar, butter, milk, and cocoa powder. Heat over medium heat, stirring frequently, until the mixture comes to a boil.
- Once it begins to boil, let it cook for 1-2 minutes, stirring constantly.
- Remove the saucepan from the heat and stir in the vanilla extract and peanut butter until the mixture is smooth and combined.
- Add the quick oats and salt, stirring until the oats are fully coated with the mixture.
- Drop spoonfuls of the dough onto a parchment-lined baking sheet, spacing them a couple of inches apart.
- Let the cookies cool and set for about 30 minutes to an hour, or until firm.
Notes
- For extra flavor, try adding a pinch of cinnamon or a handful of chocolate chips to the mixture.
- Make sure to let the cookies fully cool before storing them to prevent them from being too soft.
