Mac and Cheese Meatloaf Casserole

Mac and Cheese Meatloaf Casserole

Ingredients:

For the Meatloaf Layer:
  • 1 lb ground beef (or ground turkey)
  • 1 small onion, finely chopped
  • 1/2 cup breadcrumbs (you can use Panko or regular)
  • 1/4 cup milk
  • 1 large egg
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)
For the Mac and Cheese Layer:
  • 2 cups elbow macaroni (or any short pasta)
  • 2 cups shredded sharp cheddar cheese
  • 1 1/2 cups milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon mustard powder
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon paprika (optional for garnish)

Instructions:

1. Prepare the Meatloaf Layer:
  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine the ground beef, chopped onion, breadcrumbs, milk, egg, ketchup, Worcestershire sauce, garlic powder, salt, pepper, and smoked paprika (if using). Mix until well combined.
  3. Spread the meatloaf mixture evenly into the bottom of the prepared baking dish. Press it down firmly to create a compact layer.
2. Cook the Macaroni:
  1. While preparing the meatloaf, cook the elbow macaroni according to package directions. Drain and set aside.
3. Prepare the Cheese Sauce:
  1. In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1-2 minutes until lightly golden, creating a roux.
  2. Gradually whisk in the milk and continue stirring until the mixture thickens, about 3-5 minutes.
  3. Remove the pan from the heat and stir in the shredded cheddar cheese, mustard powder, salt, and pepper until the cheese is fully melted and the sauce is smooth.
  4. Add the cooked macaroni to the cheese sauce and mix to combine.
4. Assemble the Casserole:
  1. Pour the prepared mac and cheese over the meatloaf layer in the baking dish, spreading it out evenly.
  2. Sprinkle the Parmesan cheese over the top, and if desired, a pinch of paprika for extra color and flavor.
5. Bake:
  1. Bake the casserole in the preheated oven for 30-35 minutes, or until the meatloaf is fully cooked and the mac and cheese is bubbly and golden on top.
6. Serve:

Let the casserole rest for 5-10 minutes before slicing into portions. Serve warm and enjoy!

This casserole is a cozy mix of savory meatloaf and creamy mac and cheese, perfect for family dinners or gatherings!
